These are the only cookies I have seen people get addicted to the first time they try them. We constantly hear from past recipients, “When are you going to make those great cookies again?” meaning “Can’t you see, I need my cookie fix.”
With the main ingredients being corn flakes and bacon you can see why they are called Breakfast Cookies. They are really good for breakfast, but they’re good eating at any time.
Ingredients:
- ½ cup of butter, softened
- ¾ cup of sugar
- 1 egg
- 1 cup flour
- ¼ tsp. baking soda
- 10 bacon strips cooked and crumbled or 1 cup bacon crumbles from the package
- 2 cups corn flakes
- ½ cup raisins
In a large bowl, mix the butter with sugar together. Add in an egg, flour and baking soda and mix again. Stir in bacon, corn flakes, and raisins.
Drop rounded tablespoons 2 inches apart on ungreased baking sheet. Bake at 350 degrees for 15-18 minutes or until they are light brown. Makes about 2-dozen cookies. After cooling, cookies need to be stored in refrigerator (if they last that long).
Tried this recipe the other day. Tasty and (just as important) easy to make. Good food for the trail, too.
