This is simple, but good.
So for chicken salad you need:
- 3 cups chopped chicken (can be white or dark or both) [usually leftovers]
- ½ cup chopped onion
- ½ cup chopped celery
- ¼ cup pickle relish
- ¼ cup mayonnaise (more if you like it creamy)
- ¼ cup bacon bits (optional)
- ¼ tsp. salt
- ¼ tsp. pepper
Now this is hard. Put everything in large bowl and mix it together.
Best to make ahead of time and put into refrigerator to cool for a few hours and let flavors mingle (or at least get to know one another).
Makes 4 sandwiches. Can use any bread, but Kaiser rolls are especially good.
Serve with avocado, lettuce, tomatoes or sprouts
Can go crazy and sprinkle with celery seed or smoky paprika.
Goes well with coleslaw or potato chips.
